4 cups raw macadamia nuts (soaked or unsoaked, depending on how crunchy you want the crust)
1 1/2 cups pitted dates (preferably fresh)
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cardamom
1/4 teaspoon salt
1 vanilla bean, scaped
dried shredded coconut, as needed
1. Process nuts in a food processor until fine. Add the dates and continue to process until well blended.
2. Add the spices, salt and vanilla bean and process to mix together.
3. Sprinkle the coconut on your pie dish to prevent sticking. Press the mixture into your dish evenly on the bottom and all along the sides.
Enjoy. You can also use pecans or walnuts in crust.
