Raw Cucumber-Zucchini-Carrot Slaw with Tahini Sauce
1/2 zucchini (small to medium), grated
1/2 cucumber (small to medium), grated
1 carrot (small to medium), grated
handful cherry tomatoes, diced Tahini Sauce:
1 cup sesame seeds (not toasted)
1-2 tablespoons olive oil
2-3 tablespoons water
1. Toss salad ingredients in a bowl. For sauce, grind sesame seeds in a blender to make a powder (should take 10-20 seconds).
2. Add olive oil and water, then blend and pour all over the slaw. Use less oil and water at first, then add more if needed.
3. After you have tossed the slaw with the sauce, sprinkle 1-2 pinches sea salt over top.
I have another recipe that is similar to this one for you to use the other 1/2 cucumber and zucchini. The only difference is to add 1/2 grated onion, exclude the carrot and tahini sauce, and mash a avocado into the slaw to make an avocado sauce (http://vegweb.com/index.php?topic=41224.0).
