Ramen for Dinner

What you need: 

1 package vegan ramen noodles
1/4 pkg. frozen mixed oriental veggies (I'm partial to Birds Eye's broccoli, mushroom, onion red pepper mix)
splash of shoyu or tamari
1/4 lb. extra firm tofu (NOT silken)
1 tablespoons fresh ginger or so, minced
1 small clove garlic, minced
oil
1/2 pkg. powdered miso soup mix
1 1/2 cups water

What you do: 

In a medium sauce pan, saute the garlic and ginger in a bit of oil (I use peanut or sesame) over low heat. Cube or crumble the tofu and add it to the pot. Splash on a bit of soy sauce. Turn up the heat to medium and let cook for a minute or two. Add the water, bring to a boil, and add the noodles from the ramen soup package. (Throw out the flavoring packet the ramen soup came with.) As soon as the water starts boiling again, stir it and add your veggies. Put a lid on it and set the timer for 4 minutes.
When the timer dings, turn off the stove, add the miso soup powder, stir it up and enjoy. This variation is very filling and pretty nutritious. My son loves adding some good chili garlic sauce to his to add some kick. Either way, it's a meal in 10 minutes!

SO HOW'D IT GO?

as LucidAnne suggested, maybe the best idea is to buy separate ingredients, rather than buy single-serving ramen packets, only to toss the packaging and the flavouring too.
I look for Chow Mein noodles at a local Chinese-owned grocery store in my town, since they stock Chow Mein noodles which are not made from egg.  Those are quite good.  They also stock a number of fascinating types of oriental noodles, including rice vermicelli, and dried noodles made from yam, beans, wheat, or soba ...
Also these packages typically come in serving sizes of 4 or more, so that you can use a little less plastic for each serving.
So maybe it would serve you well to cruise down Chinatown, if you have one, or visit a local Asian shop to try some fascinating new noodle types?  :)

I've never seen ramen noodles that weren't vegan.  The spice/flavor packets are the problem, but you're tossing them, so it doesn't matter.  I also like adding 1 Tbs. of tahini to this-it adds a great sesame taste.

Where can I find vegan ramen noodles?

Are you in the US? I know canada has some diff brands...
but here in the US, there is:

Maruchan MUSHROOM flavor
Top Ramen Nissan ORIENTAL flavor
Tradition Vegetable style

THose brands are available in the reg. grocery store, so take a look. I have a hardt time finding the veg ones, actually, but the other flavors are out there...even if it says "vegetable", it may not be veg at all. Make sure you check for animal broths in the ingredients.

You can just buy the separate items...the noodles, broth powder, etc.
