Quinoa Stew

What you need: 

1 cup red lentils
1 cup quinoa
9-10 cup water
4-6 cup chopped green veggies i.e. chard, kale, Brussels sprouts, broccoli
2 onions
8-12 cloves garlic
1/3 cup ginger, minced
1 heaping teaspoon turmeric
1 heaping teaspoon garam masala
1 teaspoon crushed red pepper
1/2 teaspoon black pepper
5 pinches cardamom pods
2 bay leaves
1 tablespoon sweet basil, dried

What you do: 

Rinse lentils until water runs clear. Boil the 8-10 cup water, add washed lentils and reduce heat to medium.
Add ginger, garlic, onion. Add spices.
Chop veggies fine or stew size and add to the pot beginning with the heaviest first. Add lighter veggies five minutes apart.
Add herbs.
Stir often to prevent scorching and turn heat to low. By this time you pot has been cooking 15 min or so, add quinoa, continue cooking 15-20 minutes until quinoa blooms.
The best part:[br] Serve garnished with cold-pressed olive oil, Braggs or tamari to taste as well as chopped avocado, fresh squeezed lime, and green onion.

I chose this recipe because of the fact that it does have a lot of alkalizing properties (thanks for pointing that out!)  :) I made a few modifications - 1) I used 10 cups water 2) I used one large onion 3) I used 6 cloves garlic and 4) I omitted the red pepper flakes and cardamom (didn't have cardamom, can't have real spicy food). I used kale only for the greens. I prepared as directed. When it was done, it was definitely soupy - I will probably use 8 or 9 cups of water next time, as I like my stews to be thick. I topped with sliced avocado, Bragg's, and bottled lime juice. My hubby and I thought it was good, but we definitely enjoyed the bites with avocado better :) I would say this is a good, hearty, healthy meal that could use a little something to jazz it up, but I'm not sure what that is. I'm going to have the leftovers for lunch today, maybe I'll think of what it needs to make it rock - maybe some sun-dried tomato?? Thanks!

This recipe is definatly about the garnish! So don't forget the: Bragggs, olive oil, green onion, avacado and lime.

there was too much ginger in this recipe and it tasted really bland until i added a TON of Bragg's. i topped it with cilantro, green onion and lime and only that's when it was good. next time i'll use veggie broth instead of water. i used kale for the greens and added a carrot and a bunch of broccoli as well. i'll make this again!

This recipe also has blood alkalizing properties, if anyone is interested!
