Quinoa Salad

What you need: 

1/2 to 1 cup warm cooked quinoa
2 toasted torn up corn tortillas
1/2 cup cooked black beans
1 chopped tomato
2 handfuls salad mix (baby greens mix with nutty tasting greens works best)
Italian salad dressing

What you do: 

Put all but dressing on a plate. Pour enough dressing to flavor, but not coat ingredients, over all. Toss with hands and eat. This really does taste good. It has a subtle mix of flavors and is between a hearty and light meal. Enjoy.
