Quick Mexican Rice

What you need: 

1 1/2 cups dry brown rice
3 cups water
1 (1 1/4 ounce) package taco seasoning mix
1 (15 ounce) can tomato sauce
1 (10 ounce) can tomatoes with green chilies (I like Rotel)

What you do: 

1. For rice, place rice and water in saucepan. Bring to a boil; reduce heat, cover and simmer 45 minutes. Use a toothpick in the lid of the pan if you have trouble with it boiling over.
2. After 45 minutes, remove from heat, and let rest 15 minutes (perfect rice every time!). Rice can be made anytime in advance. If leftover is used, this recipe is almost instant.
3. To rice, add taco seasoning, tomato sauce and tomatoes. Stir and heat through.
I serve this with Fantastic Foods instant refried beans, instant black beans, tomatoes, lettuce, and corn tortillas for a quick meal.'

This was a little tomato pastey for my taste.  It was ok.  It was easy, though :)

This was really good!!
I opted to use low salt veggie broth instead of water
and doubled the recipe

Instead of the sauce, i added diced tomatoes instead along with a few other items and turned this into a beans and rice Mexican bowl

was fantastic!!!
