Quick & Easy Paradise Concoction

What you need: 

1 cup brown rice
1 (15 ounce) can dark red kidney beans
1 avocado, chopped
1/4 cup olive oil
1/4 cup picante sauce
salt and pepper, to taste
corn tortillas, to serve

What you do: 

1. Cook brown rice according to directions on package. Usually this means boiling about 2 cups water, adding brown rice and simmering 45 minutes. (This recipe is especially great when you have leftover brown rice.)
2. After the rice is cooked, add dark red kidney beans, and allow to heat.
3. Add avocado, olive oil, and picante sauce. Mix it all up and season to taste.
4. Serve on corn tortillas, as a side, or by itself. This feeds 2 very hungry people. It is delicious, filling, and fast.

This was both fabulous and super quick, in contrast to Meegs82's assertion.

I'm just learning to cook. I've literally just reached the point where I need more than the fingers of two hands to count my cooking endeavors.

This took me five minutes of preparation, including measuring and putting the rice into the steamer. Apart from that, it's mix-n-go, making this the perfect combination of timely and tasty. My boyfriend, who's an omnivore suspicious of vegan dishes, actually ate almost all of what I'd intended for a few meals. I actually had to stop him from eating the final bites for at least one leftover meal.

As I stopped him from eating it all, I commented how amazing it was that such a thing could be concocted with so little effort. If I'd only known this kind of thing was possible before, I would've stopped shying away from the kitchen years ago!  ;D
