Quick Candied Carrots
1 (16 ounce) bag baby carrots
1 teaspoon lemon juice
2 tablespoons vegan margarine
3 tablespoons brown sugar
1 tablespoon rosemary
salt, to taste
[u]Stove top Directions:[/u]
1. Simmer carrots in 1" water for about 15 minutes, then drain.
2. Add the rest of ingredients to carrots and stir gently until sugar has dissolved and carrots are glazed, about 5 minutes.
[u]Slow cooker Directions:[/u]
1. Add carrots to slowcooker, cover with water and cook all day until tender.
2. Once carrots are tender, add all other ingredients and allow to cook for one hour.
If you make this recipe, then refrigerate overnight, it will taste even better!
This recipe is for a small amount. For a large gathering, I use four bags of the baby carrots and multiply all the ingredients by four. Watch out!
