Quick and Easy Veg-Tofu Scramble
1/2 cup silken tofu
1 chopped tomato
1 small onion, diced
3 cloves chopped garlic
1/3 cup steamed broccoli tops
1/4 cup boiled potatoes
1/4 teaspoon cayenne pepper
1/2 teaspoon oregano
1/4 ground black pepper
fresh basil leaves- chopped
1. Add the onion, garlic and potato to a skillet with olive oil. Wait until the onions are cooked through and the potatoes have browned slightly on the edges. Be careful that the garlic doesn't burn.
2. Add the broccoli and tomato to the mix along with the spices.
**it is imperative that the broccoli and potato be cooked before adding them to the skillet!
3. Once the tomatoes have cooked slightly add in the silken tofu until warmed through. Mix it all together thoroughly and serve.
I like to serve mine with some spicy salsa and hummus. The hummus gives a kind of cheesy flavour without it being an actual dairy product!
