Quick and Easy Spinach Dip
What you need:
1 (12 ounce) box silken firm tofu, drained (I use Mori-Nu)
1 cup thawed frozen chopped spinach, drained
1/2 cup vegan mayo
2 cloves garlic
1 (1 ounce) packet vegan onion soup mix
1 tablespoon lemon juice
What you do:
1. Combine everything in a food processor or Vita-Mix and blend until combined.
2. Refrigerate overnight to let the flavors develop. However, I will admit that it tastes pretty good fresh out of the food processor!
Cammers and I made this for a Vegweb potluck. It's fantastic and a good base recipe if you want to add other things!

Perfect!! Next time, I will wizz the mayo and tofu mixture separately, and add the spinach afterwards, to give it a chunkier texture.
Totally recommend as a sandwich spread, too. Yum-o!
yes, i think water chestnuts would be a great addition. i love them in dips like this and have no idea why i didn't think to include them.
this was great, and really easy! I baked it for about 20 minutes, and I think next time I will add water chestnuts for crunch.

Yummy! This was the bomb!!! I used the whole box of frozen spinach (10 oz?) and a can of water chestnuts (diced). I can't stay out of it!!!! :D
we used a kosher brand. its a normal brand, i can't remember who makes it! but usually the kosher versions don't have dairy in them.
This looks great and simple. What kind of vegan onion soup mix do you use?
