Purple Pizza Eater

What you need: 

2 1/4 teaspoon dry active yeast
1 cup warm water
2 cups flour
1 teaspoon salt
1/2 teaspoon of each rosemary, curry powder, and dried parsley

Pizza Toppings
1/2 cup kidney beans
1/2 cup black beans
1/2 cup beets (shredded fresh or canned)
1 teaspoon minced garlic
1 teaspoon curry powder
3 to 4 tablespoons olive oil
1/2 bell pepper, chopped (yellow or red are best)
1 stalk celery, chopped
1 cup broccoli and/or cauliflower
1 zucchini, chopped
1/2 medium sized tomato, chopped
1/2 cup corn
garlic salt, to taste
pepper, to taste

What you do: 

My boyfriend and I came up with this delicious recipe for purple pizza! The beets give it a nice colour!
The above measurements (with the exception of the dough) are very rough. My boyfriend and I wanted pizza so we pretty much just threw together everything we had in the house. You can experiment with it and change things to your liking! Add whatever other toppings you want, too...I think kalamata olives would be an excellent addition.
1) To make the dough, put 1 cup of water into a small bowl and add the yeast. DO NOT STIR! Let it sit for about 10 minutes. Mix together your 2 Cups of flour, 1 teaspoon of salt, and curry, rosemary, and parsley. Add whatever other spices or flavorings you want in your pizza crust. Add yeast mixture and stir until you get a sticky ball of dough. Cover with a damp cloth and set aside to rise for 30 minutes. When you have about five minutes left, preheat the oven to 350 degrees Fahrenheit.
2) While your dough is rising, take the black beans, red/kidney beans, olive oil, garlic, curry powder, and beets and put them in the blender (something powerful like a VitaMix works best) or a food processor. Blend until everything is mixed well. You should have a thick, very slightly chunky consistency. Set aside.
3) Meanwhile, chop your veggies and set to the side.
4) When your dough is ready, flour a large surface area and a rolling pin and roll out your dough. If it's too sticky, roll it around in some flour and knead it until it's easy to work with. Roll out flat to your desired pizza size, making sure not to make it too thin. If you leave a little bit of height at the edges you'll end up with a nice, thick crust. If you even it out everywhere your crust will be flatter and thinner.
5) Spread the beet and bean texture (purple pizza!!) over the dough, leaving space at the edges for the crust. Add your chopped veggies, and sprinkle with garlic salt and pepper. Stick it in the oven for 20 to 25 minutes. The crust won't change color but you can stab it with a knife to check and make sure it's cooked all the way through. It's never taken more than 25 minutes for me. Enjoy!
Source of recipe: I used a pizza dough recipe I've been using for years (no idea where it came from, it's been memorized!), and made up the rest
