Pumpkin Spice Raisin Muffins

What you need: 

1 cup flour
1 cup whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
1 cup sugar
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/2 teaspoon ground cloves
1 (15 ounce) can pumpkin
1/3 cup canola oil
1 teaspoon vanilla
1/2 cup raisins

What you do: 

1. Preheat oven to 350 degrees F. and grease muffin tin. Combine flours, baking powder, soda, sugar, salt and spices in large bowl.
2. Slowly stir in the pumpkin, canola oil, and vanilla. Mix into consistent dough and fold in the raisins.
3. Fill prepared tins 3/4 full. Bake for 20-25 minutes.

SO HOW'D IT GO?

These were phenomenal. I used dried blueberries instead of raisins and I added 1/2 teaspoon of brown sugar and 1/4 cup of walnuts. It took around 28 minutes to bake correctly, but thanks for this recipe. Fantastic!

I make these all the time but without the raisins! I love them and everyone who tries them can't believe they are vegan!

I've made these several times. They are so good!  Definitely need 25+ minutes for baking time though.
