Praline Pecan Cheesecake

What you need: 

Crust:
1/4 cup pecans (chopped)
3 tablespoon raw sugar
1 1/2 cup vanilla wafers (finely ground) or vegan graham crackers
1/4 cup margarine (melted) Filling:
1 pound vegan cream cheese
1 1/4 cup sugar
2 tablespoon pastry flour
3 tablespoon applesauce
1 1/2 teaspoon vanilla
1/2 cup pecans (chopped)

What you do: 

Crust: Blend all ingredients (except margarine). In mixing bowl, add wafer mixture and melted margarine (to moisten). Place mixture in round foil pie pan, pressing down to cover the whole pan. Bake at 350 degrees for 6 minutes. Remove from stove.
Filling: Mix vegan cream cheese and sugar in bowl. Stir in flour, slowly add applesauce. Stir in vanilla and pecans. Mix all ingredients well. Pour mixture onto wafer crust and bake at 350 degrees for 1 hour. Garnish top of cheesecake with pecan halves.

SO HOW'D IT GO?

I really liked the flavor of this recipe though I would make some changes, first I wasnt able to find any vegan nilla wafers so I used gingersnaps, which tasted great but it was very sweet so I would omit the sugar in the crust, second I wasnt ever able to get this cake to set, I baked it for an hour and fifteen minutes and the top was cooked but the inside was almost a pudding consistancy...maybe more flour? Like I said it tates great, its just not the right consistancy so ill try to make it again sometime and see what happens.
