Potummus (Hummus Mashed Potatoes)

What you need: 

6 russet potatoes, peeled and cubed 1"
1 cup garlic hummus (we use homemade)
3 to 4 tablespoons vegan margarine
2 pinches paprika
2 pinches cumin
2 pinches lemon pepper
2 pinches crushed red pepper, optional
2 tablespoons parsley
salt-free seasoning blend (we used Bragg's Organic Sprinkle)
salt and pepper, to taste

What you do: 

1. Fill a pot with water and bring to a boil. While water is boiling, put potatoes in pot. Cook potatoes until tender. Drain. Put back into pot to mash.
2. Add hummus, margarine, and spices.
3. Mash to desired consistency. Enjoy!
Roasted garlic would be a really good addition as well, but garlic hummus does the trick.
Source of recipe: We wanted mashed potatoes and didn't have any soy milk, so we made this up.
