Potato Salad

What you need: 

5 good sized potatoes
1/4 large onion, chopped finely
2 tablespoons relish or finely chopped pickles
3 tablespoons vegan mayonnaise
3 teaspoons mustard of choice
dash of Tabasco
diced jalapenos (as little or as much as you like)
salt (to taste)
pepper (to taste)
dill (to taste)

What you do: 

Chop potatoes into cubes and boil until tender (about 20 minutes). Drain and let sit until cool.
Add vegan mayonnaise and mustard. Stir until all potatoes are covered (you might need to add more of either).
Add relish, jalapenos, Tabasco, salt, pepper, and dill. Mix well!
Enjoy!

SO HOW'D IT GO?

I made a few changes to the recipe.  I omitted the tabasco sauce, jalapenos and dill.  I added 2 stalks of chopped celery.
It turned out excellent. :)
