Potato Chowder

What you need: 

3 average sized potatoes, peeled and diced (russet or Yukon gold, preferably)
2 tablespoons margarine
1 tablespoon flour
white pepper, to taste
1/8 teaspoon freshly ground sea salt
1 1/2 cups nondairy milk (I use soy)
1/2 white onion, chopped
garlic powder or salt, to taste
fresh chives, for garnish

What you do: 

1. In a medium frying pan, cook the potatoes through, and set aside. In a medium sauce pan, melt the margarine on low. Once melted, add the flour, sea salt, pepper, and mix thoroughly.
2. Add the milk all at once. Cook quickly, stirring constantly until the mixture thickens and bubbles. Reduce heat to low, and add the potatoes, onions, and garlic powder or salt.
3. If at this point the soup is too thick, one may add milk; if it is too thin, a small amount of arrowroot powder may be added to thicken it up.
4. Continue to heat on low, stirring occasionally, until the onions are tender. Separate into soup bowls and garnish with chives. Serve.

SO HOW'D IT GO?

This worked very nicely, it tasted good after letting it sit I the fridge overnight! Instead of margerine, I used two tablespoons of coconut oil (solid)

Made it and it was great even though I used vanilla almond milk and it came out really sweet. Loved it though. Going to make it again tomorrow night!(:

This was great as a base for a soup, I make a few changes and it turned out super yummy. I sauteed the potatoes and a full onion together with fresh garlic and olive oil. I removed it from the pan and melted 3-4 tbsp of earth balance in the same pan. I added the flour (it does come out clumpy, just wisk the heck out of it!).I added the milk and the potato mixture back in and added 1/2 lb of soy meat crumbles. Served it over some brown rice pasta and ate it up! Mine came out sweet too, but that's because of the soymilk. Most brands add sweetners, even though they say they don't. You could even add a bit more flour to make it thicker and some vegan cheese. Serve it over over brown rice pasta and Bam! You've got vegan hambuger helper!

To those who commented that they found the recipe too sweet, it could have been the non-dairy milk used. Even if you use plain non-dairy milk (no vanilla or anything), unless it reads unsweetened on the package, it will have sugar in the ingredients. Give this recipe another shot!

I usually just nuke the potatoes in the microwave to save time, I estimate the salt/pepper/garlic powder, and I end up adding a little instant mashed potatoes to thicken the broth, but I've yet to have a bad experience with this recipe. It's great with crackers, or if you're an onion freak, those french-fried onions you see on green bean casseroles. I like the hint of sweetness some people mention from the soy milk; I think it goes well with the natural sweetness in onions, but if that bothers you, you might try an unsweetened non-dairy milk or a different recipe.
All in all, I'm extremely pleased with this, and it has a permanent place in my recipe box. Thank you poster  ;)b

I made this chowder today with some changes and ideas for future changes. I used a shallot instread of an onion because of an onion allergy. I also added paprika and old bay seasoning. I'm thinking I'll put my shallot in with the potatoes when they are cooking instead of waiting to add them. It's possible I didn't chop it into small enough pieces. I did a dice but I think a fine dice would have been better. I also did not use the chives because of the onion allergy. This was delicious and I will make it again!

I made this recipe because I had no food in the cupboards other than the listed ingredients. It was pretty good but I had to add a LOT of spices. I ended up adding a dash of Old Bay and a dash of Cayenne while cooking and then I had to add some crushed red pepper while I was eating it. But it is perfect in a pinch or a really cold day.

These were absolutely DELICIOUS!
I cut down a bit on the ingredients as a whole but stil i couldn't finish it cus im full. :P
But i can't wait to finish it laterr!
Thanks for this recipe i definitely WILL make it again!
Oh yeah, and my mom had a bit and she thought it was yummy too. ^^
