Potato Biscuits

What you need: 

2 cups chilled vegan mashed potatoes
3 to 4 pieces toasted whole wheat bread
About 1 cup flour
Vegan butter, for cooking
Salt
Garlic seasoning
Onion powder

What you do: 

I usually chill the mashed potatoes overnight the night before hand. You can't make this with warm mashed potatoes.
1) Toast bread until it is toasted all the way through. Tear bread apart into crouton sized pieces and add to the mashed potatoes. Mix well and add more bread if needed. I prefer a one to one ratio of bread to mashed potatoes but my mom makes it was a little less bread.
2) On a clean, floured surface, take mixture and make 4 to 6 patties, depending on how big you want it to be. The patties should be no more then an inch thick. Dust the patties with flour.
3) In a frying pan, melt about 2 tablespoons of vegan butter. Once pan is well coated add patties and sprinkle with salt, onion powder, and garlic powder. Fry patties until medium golden brown then flip over and repeat with another dab of butter.
I like to put ketchup on it and serve with OJ, peaches, and vegan bacon.

SO HOW'D IT GO?

These are really delicious!

I added some chili flakes to give them a bit of a kick and used real garlic then I whipped it around in the food processor and just threw them in the frying pan, no flour! Viola!

Hm... sounds like toast meets hash browns...  maybe worth a try
