Portabellas & Tomatoes on Angel Hair Pasta

What you need: 

2 portabella mushrooms, chopped
1 can diced tomatoes, drained
cooked angel hair pasta (enough for two)
vegan soy parmesan cheese
olive oil
balsamic vinegar
garlic powder
onion powder
dried basil

What you do: 

Saute mushrooms in olive oil on medium heat until soft. Add tomatoes, garlic & onion powders, dried basil and splash of balsamic vinegar. Saute for another 5 minutes, then add tomatoes. Saute for another 10 minutes or until flavors mingle. Serve on angel hair pasta and sprinkle with soy parm.

Great and very quick.

So good! My dog, Chester, got a taste for pasta and while I was out shopping ate the whole box of angel hair that I left on the counter, so I had to use regular spaghetti, instead.  I made wayyyy too much pasta and ended up adding a cup and a half of steamed broccoli as a space filler.  It was excellent!

really great! i cooked this for my parents' 18th wedding anniversary, and they loved it- it can stay warm for quite awhile on a stovetop without getting too overcooked.  ;D

This was great!  I was feeding 5 so I increased and altered a bit.  I used 4 portabellos, a large can of tomato and I added 1 can chickpeas and 1 head of kale sauteed w/ the veggies.  I tossed the pasta w/ olive oil and vegan parm before adding topping.

quick, easy and delicious!
