Poor Girl's Burrito Supper

What you need: 

Burritos:
1 tablespoon olive oil
2 cloves garlic, minced or crushed
1/2 yellow onion, chopped
1 fresh jalapeno pepper, minced, divided
1 (15 ounce) can black beans
juice of 1 lemon, divided
4 sprigs fresh thyme, leaves removed
8 tortillas Guacamole:
2 avocados
3 tablespoons salsa
1-2 cloves garlic, minced or crushed
salt, to taste

What you do: 

1. Add olive oil to a saute pan. Turn heat on high and sweat garlic for about 30 seconds (don't let it brown!). Turn heat to medium and add onion. Cook onion and garlic for a few minutes until onion begins to be translucent.
2. Add about 1/3 of minced jalapeno pepper and cook for another couple of minutes. Keep heat on a medium setting and add black beans. Stir for a couple of minutes, then add another 1/3 of jalapeno. Reduce to a low heat, allowing it to simmer for about 8 minutes.
3. Add 1/3 of lemon juice and fresh thyme, and raise heat to high. Cook on high for 3-5 minutes, stirring constantly, then remove from heat.
4. For guacamole, combine avocado with salsa, garlic, 2/3 of lemon juice, and the remaining 1/3 of jalapeno; stir ingredients together. Add salt, to taste. Spoon bean concoction and guacamole onto tortillas. Enjoy!
