PMS Pie

What you need: 

Peanut Butter Brownie:
1/2 cup peanut butter
1/2 cup brown sugar
2 tablespoons oil
1 1/2 tablespoons flax meal + 4 tablespoons water
1/2 teaspoon vanilla
1/2 cup nondairy milk (I use soy)
3/4 cup flour
1/2 cup cocoa
1/2 teaspoon baking powder

1 9"vegan graham cracker crust Cookie Dough:
3/4 cup brown sugar
1/4 cup vegan margarine
4 tablespoons nondairy milk
1 teaspoon vanilla
1 cup flour
1/2 cup vegan mini chocolate chips, optional Mousse:
1/2 pound extra firm silken tofu (about 1 cup)
1/3 cup sugar
2 1/2 tablespoons cocoa
1/2 teaspoon vanilla

What you do: 

1. Preheat oven to 350 degrees Fahrenheit. Mix flax seed and water, and let stand a few minutes until gummy. For brownie, combine peanut butter, brown sugar, oil, vanilla, milk and flax mixture. Add dry ingredients to peanut butter mixture and mix until combined; batter will be thick.
2. Scrape peanut butter mixture into graham cracker crust. Bake in preheated oven for 26 to 30 minutes or until toothpick comes out relatively clean. Let cool; prepare cookie dough.
3. For cookie dough, cream brown sugar and margarine. Add vanilla and milk, and combine. Add flour and optional chocolate chips and mix well. Spread dough over cooled brownie and refrigerate while you prepare mousse.
4. For mousse, process all mousse ingredients in food processor until smooth, creamy, light and fluffy. Depending on the strength of your processor, this could take a couple of minutes. There should be no traces of tofu at all. Refrigerate for an hour or so then pipe decoratively on pie.

SO HOW'D IT GO?

I made this tonight and the mousse came out not like mousse at all. I followed the recipe exactly, so I'm not sure what could have gone wrong. It came out very watery though, with no body or "fluff" whatsoever.
It's an awesome idea for a pie, it just didn't turn out nearly as good as it sounds.

Can I substitute anything for the flax meal? It's basically an egg substitute right?

yes, sub with whatever you generally use as an egg substitute.  ;)b

Can I make this with sunbutter instead?  My nephew has a nut allergy and I would like for him to be able to try it.

I think that it would probably work fine although I have never tried it...I say give it a try. :)

Oh my peanut buttery goodness!  I made this while procrastinating for finals and was so worth it!  I used some Newman's Peanut Butter Oreos crushed up instead of a graham cracker crust.  Decadence!  Peanut butter lovers-- Make this now!   

There are Peanut Butter Newman-O's????  :o

oh my sweet baby jesus!!! that seriously looks like the perfect way to fend off those pesky chocolate cravings, all while working on crafting that perfect cavity!

for thanksgiving i made a vegan chocolate cheesecake, with an oreo  (most of the store brand generics are vegan, but you probably already knew that. =) ) cookie crust, and a peanut butter/mousse/frosting. it came out alright, the crust was a little weird and like burnt in some place

- i'll post the recipie later-

however, this seems like it would be MUCH better! i love and enjoy vegan baking, but am still having a hard time perfecting vegan pie crusts. do you have any recomended methods or techniques?

i can't wait to get a significant amount of free time so i can try out this pie. i'll prob have to wait a month tough just so that it can be aptly named =p
