Pizza Base

What you need: 

1 to 1 1/2 tablespoon of dry yeast (the little balls, usually bought in a tin)
3/4 cup of warm water
1 teaspoon brown sugar
1 cup of cake flour
1 cup of bread flour
1/2 teaspoon salt
2 tablespoon olive oil

What you do: 

Mix the yeast, warm water and vegan sugar together until frothy and then leave for 10 minutes. Sift the cake flour, bread flour and salt into this, mixing while you're sifting. As you start mixing, add the olive oil.
Knead the dough softly until it feels like playdough (you may need to add more flour to stop sticking). Leave to rise in a warm place (can wrap in clingwrap and place in the warmer if you don't have a lot of time). Once risen, knead down again (not too much), then roll out into your bases.

SO HOW'D IT GO?

This was pretty simple. I used it to make calzones. It rose pretty fast (<15 minutes), but that may be a combination of the fact that it's hot in my apartment (4th floor of a 4-story building, July, no AC...), and I put in a lot of yeast because I had issues making it dissolve.

For the flour, I was running low on any one kind... so it was about 4/5 cup spelt flour, 1/5 cup corn meal, and 1 cup buckwheat flour :). I also didn't have any olive oil, and replaced the 2tbspn olive oil is 2 teaspns peanut oil and 4 teaspoons apple sauce. It turned out really great!! It was really fast, too. Thanks!

i just used my normal dry yeast, it wasnt in little balls, but it worked out fine and i made this with whole wheat flour instead of cake flour like you said at the end.. it was really good.. i made a pizza w/ sausage sauce, pineapple, peppers, onions and oyster mushrooms.. this is really simple and easy..
