Pistachio Ice Cream

What you need: 

1 box (4 serving size) of pistachio pudding (check ingredients)
2 cups soy milk (I used vanilla)
2 ripe bananas
splash vanilla (optional)

What you do: 

This recipe is also easy to "halve" if you just want two servings, since I find that "freezing" homemade vegan ice creams makes them hard as blocks!
Put everything into the blender and blend until smooth. Then put into ice cream maker and freeze according to it's instructions.
If you don't have an ice cream maker, you can try freezing it in the freezer, stirring it every so often so it doesn't turn into a solid "mass".
You could also try using frozen bananas...that might make a nice "shake".

SO HOW'D IT GO?

Verrry delicious and found that mine froze well and I can enjoy it on many different occasions!  (use freezer containers instead of any tub o wear, etc.)  or maybe it froze well because I used abnormally large bananas...which did cause the taste to be more bananaish...Going to use almond extract next time round.

I emailed jell-o a few months ago to ask about the mono- and diglycerides. Their response was basically that they don't know. I'll check if I still have the email.

So I'd avoid that brand. But I think Dr. Oetker does make a vegan pudding mix.

i scoped out the jell-o brand boxed pudding and the pistachio box contains "MONO- AND DIGLYCERIDES" which can be from animals... do u know if this brand is vegan for sure? or what brand of mix do u use?

According to PETA it is vegan, but that depends if you trust PETA.

I've never had pistachio and I don't plan on making it, but I just wanted to say that the kitty in BP's picture looks like a chocolate peanut butter cup.  :-*

true, it really is more of a pistachio-banana icecream. i've never had pistachio icecream (even in my dairy days) so perhaps the title is misleading for people who want something more like "pistachio ice cream". :) so as MM says.... be warned!!!

this recipe is definitely yummy and my hat's off to the author because i know it is no easy task getting vegan ice cream to freeze to the right consistency. just a few critiques though, in the interest of making sure people know what to expect.

this doesn't really taste like conventional pistachio ice cream, but rather like pistachio pudding with an ice cream consistency. overall it it just very sweet and syrup-y without the almost salty flavor of conventional pistachio ice cream.

i only used one banana, as i didn't want an overpowering banana flavor, and i don't think the second banana would have been helpful. i also added a pinch of guar gum, which helps get the consistency right.

like i said, this is still a good and QUICK way to satiate your craving for vegan ice cream.

thanks for the kind reviews. pudding mix is a fantastic thing in making vegan icecream, given you can find some vegan pudding mix....
