1 lb (500 g) of each of the following:
fresh or frozen green beans, sliced down the middle
firm potatoes, diced
zucchini (courgettes), quartered long ways and diced
tomatoes, seeded and chopped
2 large onions, diced
2 cloves garlic, crushed
2 quarts (2 litres) water
Pistou: 500 g (8oz) chopped tomatoes
fresh basil, chopped
2 cloves garlic, chopped + 1/4 cup olive oil
vegan mozzarella or Dragonfly's Uncheese OR pine nuts
Place soup veggies in a pot with the water and bring to a boil. Cover and simmer for 1 hour.
Blend the pesto ingredients in a blender and add to soup at the last moment.
