Pesto Sauce That's Healthy!!!
1 small package of basil leaves (about a cup)
1 bag spinach
1/2 cup olive oil
3-4 cloves garlic
1-2 cups veggie Parmesan cheese substitute
shake of cayenne pepper (more or less to taste)
salt & pepper to taste
1 pound angel hair pasta (or any pasta, really)
Cook pasta according to directions.
Meanwhile... Rinse all basil & spinach leaves well. I cut off the stems - can leave on if desired.
Add basil, oil, garlic & spinach to food processor, little bits at a time, pulsing until it's all blended well. Add more oil if necessary to make smooth consistency.
Add the veggie Parmesan & spices to taste.
Sometimes I warm this in a saucepan afterwards; otherwise just pour it over cooked pasta and viola - tasty & healthy!
