PERFECT Sweet Vegan Cornbread (Fat-free & Gluten-free!)

What you need: 

1 cup cornmeal
1 cup flour (I use rice flour to make this gluten-free!)
4 teaspoons baking powder
1 teaspoon salt
2 tablespoons flaxseed meal + 6 tablespoons water
1 cup nondairy milk
1/2 cup unsweetened applesauce

What you do: 

1. Mix all dry ingredients together well.
2. Fold in the wet ingredients until just blended (avoid stirring too much). Mixture should be doughy and thick!
3. Place in (cold) oven and set to bake at 450 degrees F for exactly 20 minutes.
You can use sugar if you would like it sweeter, or even use a sugar-free replacement. This is so good just out of the oven warm, but also freezes well for later use!
Source of recipe: I found this recipe somewhere (can't remember where), and changed a few of the ingredients to make this version.
