Pepparkakor

What you need: 

1 cup vegan butter (I use Earth Balance)
1 1/2 cups sugar (I use Florida Crystals natural sugar)
1/2 meduim ripe banana
1 tablespoon agave nectar
2 1/4 cups fresh squeezed orange juice
2 teaspoons orange zest
3 1/2 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
2 teaspoons cloves
2 teaspoons allspice
vegan nog or other nondairy beverage, as needed

What you do: 

1. Preheat oven to 400 degrees F. Cream butter and sugar. Stir in banana, agave nectar, orange juice, and orange zest.
2. Pour in all dry ingredients and mix very well. Add nondairy beverage as needed. I think I used about 1/4 cup.
3. Shape as desired. I formed mine into 1/4" thick patties that were about 1 1/2-2" in diameter.
4. Bake for 8- 10 minutes.
Source of recipe: I found this recipe on a Scandinavian website quite some time ago, and finally got around to veganizing it.
