Peanut Butter Fudge

What you need: 

1 cup peanut butter
3/4 cup margarine or shortening
3 cups sugar

What you do: 

Melt the vegan margarine/shortening on stovetop. Lower heat and add peanut butter. Wait until peanut butter has mixed with the margarine/shortening and add vegan sugar by a cup at a time, stirring a lot. When you add the vegan sugar it will become a little sticky but keep stirring, and it should come out smooth. When done, put in a pan and chill.
Its so good I'm actually eating some right now. :]

I used this recipe but tweaked it to make it in a microwave, hah. I put a few spoonfulls of peanut butter in a bowl with some smart balance and microwaved it until the butter was melted, stirred it, and mixed in some powdered sugar and every now and then I'd microwave it a bit more, then I threw the bowl in the fridge.
Yum. Haha. Pretty darn good for not even having to heat up a pan.


Yum. This was really good. I would have liked it a little creamier but can,t really complain because it,s so fast and easy to make.


I made only a half a batch and used soy butter instead of peanut butter, and when I added the powdered sugar it didn't get thick at all. I added a little extra sugar and some coco powder and it was still pretty thin. When I poured it into the pan to cool it seemed like the oil in the margarine was separating. It is in the refrigerator cooling right now, I am anxious to see how it turns out. I'm hoping it is still yummy cause I'm craving something sweet!


Knowing this is all butter and sugar makes me a little uneasy but it is really good.  It taste perfect.  I was going to use my White Chocolate Wonderful pb by The Peanut Butter Co but then I thought, why not use the Dark Chocolate PB?  So thats what I did and its great.  :-)  The only problem is after adding just 1 cup of powdered suger it was perfect but I added another 1/2 cup and it was almost impossible to stir.  I taste ALOT of the powdered sugar, next time I'll try it w/ just the 1 cup.  How the heck did u get 3 cups in there??
