Peanut Butter Frosting

What you need: 

1/2 cup natural peanut butter (unsweetened)
1/2 cup vegan margarine (I use Earth Balance)
2 cups powdered sugar
2 tablespoons nondairy milk (I use soy)

What you do: 

Beat together all ingredients in a mixer until smooth.
Great served on a chocolate cake or cupcakes, for filling cookies, or just to eat when you’re feeling sorry for yourself.

SO HOW'D IT GO?

this was pretty good!
i 1/2'ed the recipe and there was stiII pIenty for my 12 cupcakes (i used the Super moist chocoIate cake recipe from this site).
one thing for me was i tasted more margarine than i preferred, so next time i think i'II 1/2 the margarine and just add more peanut butter.
some of my sisters just Ioooove peanut butter and i know theyII adore this.

I ommitted the Milk, it really didn't need it. I used raw honey instead of sugar. It was sweet enough not too overwhelming.

i can't get vegan margarine here in the Carribean (seriously every single margarine here has fish oil in it, it's sick) so i used a little more than 1/4 cup coconut oil instead and 4 tablespoons of coconut milk instead of 2 tablespoons of soymilk.. it came out a little runny, but was super yummy and gooey..  :)

I would put this peanut butter frosting on EVERYTHING - bananas, cookies, tomatoes, my fingers!  ;D

The only change is that I added a splash (1.5 tsp) of vanilla per the suggestion of Joy of Cooking.

Is icing sugar the same thing as confectioner's sugar?
