Peanut Butter French Toast

What you need: 

1 cup non-dairy milk (I used Almond Breeze-Vanilla)
1 teaspoon cinnamon
1/2 teaspoon vanilla extract
1/4 cup creamy peanut butter
2 tablespoons flour
6 slices vegan Texas toast or thick-cut bread
oil for frying

What you do: 

Warm 1/4 cup peanut butter in microwave for about 10-15 seconds or until almost runny (so that the batter doesnt get clumpy). Combine all ingredients in bowl.
Dip bread slices in batter for 1-3 seconds on each side, to avoid soggy bread.
Fry on low-medium heat for about 3 minutes on each side or until brown.
Garnish with bananas and maple syrup! Mmm. This is definitely the best French Toast I have ever made.
Tip: If bread does get soggy, just stick it in the toaster for a minute and it'll be fine. =] Enjoy!

SO HOW'D IT GO?

I tried this recipe and it turned out so well.  I slightly toasted the bread before dipping it in the batter, as suggested. Great idea.  Also, it might be obvious to use creamy peanut butter but all I had was super crunchy.  It worked fine but I found myself picking out the peanuts from the batter before dipping the toast.  I would highly recommend this Vegan recipe.

Holy hell, is this delicious! I used Peanut Butter & Co's white chocolate wonderful with some maple syrup that tastes like honey! Thank you for sharing.
