Peanut Butter Cups

What you need: 

1-1/2 cups vegan chocolate chips
1 cup peanut butter, reduced fat and creamy
1/4 teaspoon salt
1/2 cup powdered sugar

What you do: 

1. Cut the top half of the muffin cups to where they are about half the original height for 12 paper muffin cups.
2. Microwave the chocolate chips for about 2 minutes at 50% power in a glass or microwaveable bowl. Stir until creamy, you might need to microwave them a little more. Make sure you do not overcook them. Using a spoon or new paint brush spread the chocolate evenly within the muffin cups making sure you fill the crevices on the sides. Place the coated muffin cups in the freezer until the chocolate hardens.
3. In a bowl, combine the peanut butter and salt, then fold in the powdered vegan sugar. Microwave the mixture for 1 minute. Stir and allow to cool.
4. Spoon the peanut butter into the chocolate cups leaving a little room for the top layer of chocolate. You have the option of putting the top layer of chocolate on now or after the peanut butter has hardened in the freezer. Both ways work just as well in my opinion.
5. Place the cups in the freezer and wait an hour (or as long as you can).

SO HOW'D IT GO?

;)b Very good starter recipe. I used powdered sugar to mix in with the peanut butter along with some finely crushed graham crackers. these were so good everyone was asking how to make them.

I'm not vegan so I used Sunspire Organic chocolate chips and since they contain cocoa butter, didn't have any melting issues.

Since I don't own a microwave (and never will again) nor a double boiler, I put the chips and peanut butter (separately) into a round stainless steel bento box and put that in a bigger pot of boiling water to melt. Not the most efficient way but it worked for me.

Problem #1:  When trying to get it out of the boiling pot of water, a bit of the water got into the chocolate which instantly made it meltier...hmmm (so part problem, part not)

Problem #2: End product, bottom layer of chocolate was melted. It was perfectly hardened in the beginning but must have melted after I added the warm peanut butter and even after I left the cups in the freezer for like 1 hour.

Cupcake cups: Found a great product called Cupcake Creations (see photo below) and in my favorite color: pink! They stand up without using a muffin pan and didn't need greasing (hmmm...I might should question why) so they didn't stick. Found them at Sprouts.

They weren't pretty but my omnivores loved it! :)>>>

I used chunky, low fat peanut butter and Guittard Semi-Sweet Chocolate Chips and they tasted wonderful!  I made some in foil muffin cups and they did not stick at all.  I also tried some in mini paper muffin cups but I sprayed a touch of Pam for Baking in the bottom and spread it around with my finger and those did not stick at all either.

i made these tonight and they are SO GOOD!  ;)b
i plan on making these as little christmas goodies so i just made a half batch to test out the recipe. i used too much chocolate on the bottom layer and ended up only making four. i had to melt a little more chocolate to make the top chocolate layer.
i added a little vegan butter and soymilk to the chocolate to make it creamier but i wasn't thinking when i did so and i just added it after the chocolate had been melted...so it turned into a fudgy, thick mess. it didn't mix it very well and it was hard to spread in the muffin cups for the bottom layer. i mixed it some more, with the soymilk, and it was a little easier. i used crunchy peanut butter because it was all i had, and i think either kind of PB would work well here.
even with my little chocolate problem, these turned out delicious! mine are huge..almost to the tops of the muffin cups. so i think for future reference, i'll use the mini-muffin cups.

Oh my goodness, these are so great! Last time I made them, I used granulated sugar, and this time I used powerdered. Both ways were awesome, my mom and I thought the granulated seemed to taste more homemade. The powdered sugat was so smooth though, and they were great.

THANK YOU!!!!! These are so good! I made them last night and wow!!!! I used the mini muffin cups and it made 24 bite size candies! I am gonna make these again and again! ;)b

Ok, first of all these are really good!  But I obviously dont know how to melt chocolate, I used a double boiler method but it was still pretty thick, so spreading was difficult and it made my muffin cups collapse.  I also didnt have enough chocolate left for the top.  With the peanut butter I used agave sweetner rather than sugar and it worked well, it also caused the pb to be a little thinner and softer but didnt affect the final outcome.  So the pics are not so pretty but they are tasty.  I would like to perfect the recipe to serve them to others.  My daughter and I were making these together and we were laughing hysterically at our difficulties.  She is taking some to school to her friends tomorrow.  :-D

reeses peanut butter cups used to be my favorite candy ever...i got SUCH a bad craving for them the other night so i made these...THESE ARE SOOO MUCH BETTER!  :)>>> my omnivore roommates and boyfriend loved them too!  ;)b

I tried this recipe out 2 years ago and had a lot of trouble. But I gave it a try again today and was very successful! I think my biggest problem was trying to melt the chocolate in the microwave.  My microwave is particularly crappy so I should have known it would cause problems.  This time I melted the chocolate in a double boiler over the stove and kept it continuously melting on a low heat as I put the chocolate into the cups.  I highly recommend this as it makes the chocolate a lot easier to work with.  I also tried a mini cupcake pan this time which I also recommend for portion control (! cause they're so yummy !) and also so there's more to share :) Not sure if this is because i made minis but I only needed half of the pb mixture. The only real mistake I made this time around was not putting the pb in the middle with enough room on the sides for the chocolate to fully enclose it.  But they really are delicious and I'm so glad I tried this again!
