Peanut butter and Banana Cookies

What you need: 

3/4 cup flour
1/2 teaspoon baking soda
2 teaspoons baking powder
1/8 teaspoon salt
1/4 cup all shortening
1/4 cup peanut butter
1/4 cup sugar
1/4 cup brown sugar
2 bananas, mashed
options:
1/2 cup chopped nuts (walnuts, pecans, peanuts) or dried rasins, or cranberries

What you do: 

Sift and mix first four dry ingredients together.
Cream together next five and add to the dry ingredients. May add more flour, depending on the size of your bananas and the consistency of the peanut butter. Stir in nuts and/or fruit.
Preheat oven to 375 degrees. Put tablespoon sized balls on a cookie sheet.
Bake cookies for 10 minutes or until brown on bottom.
A very (light) soft and chewy textured cookie.

SO HOW'D IT GO?

these are not my favorite cookies they came out more like cake. I like chewy cookies, but not cake like cookies. COuld i have added too much flour??

i made these yesterday for my VERY unvegan friend, and he loved them.  the peanut butter flavor is pretty mild in this recipe, so next time i'll probably add a little bit more than the suggested amount (i'm a PB fanatic..).  by overall, a great recipe that yields nice, light, fluffy goodness.  thanks!

Hey,

So I really supper wanna make these cookies but, I might be short on ingedience. I was wondering, can I just use more regular sugar if I don't have any brown sugar? And, if I don't have any shortening, would margarine work? Hope someone can help.

The batter was super moist so I ended up using about 1 1/4 cups of flour and they turned out well. They were nice and soft, unlike most cookies I make.  :)

I definitely overcooked these, but they were still pretty good. I have to agree blondiegurl that they taste like banana bread, and are not, in fact, that cookie-like, but the only part of banana bread I ever liked was the top because it's crispy, which this cookie has all around. I guess you just can't go wrong with peanut butter and banana. By the way, I added walnuts.

This was absolutely delicious!  It came out with the consistency of banana bread, and tasted like banana bread, but thats okay because it tastes fabulous and is super easy to make!!!

Thanks for a great recipe! All I added was one teaspoon each of cinnamon and nutmeg, for a little extra flavor.

Thanks for the great recipe. I was impressed by how light the texture was. I added 1/2 cup of carob chips instead of the nuts & WOW, the cookies didn't make it to the end of the day.
