Pasta with Garbanzo Beans and Spinach

What you need: 

1/4 pound spaghetti
1 teaspoon olive oil
1/2 cup onion, chopped
1-2 cloves garlic, minced
1/2 teaspoon dried dill
2 cups tightly packed spinach, chopped
1/4 cup canned garbanzo beans, rinsed and drained
2 tablespoons fresh lemon juice
salt and pepper, to taste

What you do: 

1. Cook pasta according to package directions. al dente.
2. Heat oil in medium skillet (nonstick is better) and saute onion, garlic and dill over medium heat for about 5 minutes.
3. Add spinach and garbanzo beans and continue to cook for about 3 minutes.
4. Drain pasta. Mix pasta and spinach mixture in serving bowl. Add lemon juice and salt and pepper.
This recipe is one of my favorites and its quick. I usually double the recipe and eat the leftovers for lunch the next day.

I really liked this recipe because it was simple and the ingredients were available in my cupboard. I even did what another user suggested and added sun-dried tomatoes and some basil and mozz cheese.  :) Thank you! I look forward to eating it again tomorrow for lunch :)>>>

I used a little less onion and added part of a shallot.  I also subbed a little white wine vinegar and lemon pepper seasoning for the lemon juice since I didn't have any.  I let it sit overnight and ate it this morning. It was highly tasty!  It was kind of like....pickles meets pasta, very unique and tasty.

I tried making this dish but didn't have the dill and lemon and it turned out to be on the dry side.  :-[  I added Progresso Chicken Broth and turned it into soup, since all the ingredients go into soup anyway and it turned out Great!  ;)b

Very tasty and easy to fix.  My DH did the cooking and followed the recipe pretty closely.  He may have put more onion in there than it called for.  I think the seasoning was just right.  Not everything has to be extra spicy to be good.  This is definitely something we will be making again and again!

Excellent. I've also made this with hummus substituted for the garbanzos and lemon juice. A keeper.
