Pasta e Ground Veggie Burger

What you need: 

1 box any shape pasta (pref. whole wheat)
1/2 medium yellow onion, chopped
1/2 stalk celery, chopped
1/2 carrot, chopped
3 garlic cloves, chopped
2 teaspoons soy sauce
pinch salt
pinch red pepper flakes
ground black pepper
28 oz can pureed tomatoes
.5 cup water
fresh chopped parsley
vegan ground burger
extra salt and pepper to taste

What you do: 

1. Boil pasta.
2. While boiling, saute onion, celery, and carrot in olive oil spray and a little bit of water.
3. While sautéing, add the salt, pepper and red pepper flakes.
4. Add soy sauce, cook 2 more min.
5. Add garlic and sauté for 1 minute
6. Pour in tomato puree and enough water to great a nicely blended sauce.
7. Let simmer for about 15 minutes to Thicken.
8. Add parsley, vegan ground burger, cook about 5 minutes.
9. Add salt and pepper to taste.
10. Pour over pasta.
