"Parmesan" Couscous Stuffed Bell Peppers

What you need: 

1 (6.6 ounce) package couscous
1-2 medium to large bell peppers
1/4 cup vegan mozzarella cheese, shredded
1/4 cup vegan parmesan cheese, shredded
1 vegan burger patty, crumbled (I used Boca)
1 medium clove garlic, minced
1-2 drizzles olive oil
1/2 cup vegan grated parmesan cheese
salt and pepper, to taste
handful Italian flat leaf parsley, roughly chopped, for garnish
1 slice vegan smoked mozzarella cheese

What you do: 

1. Cook couscous according to package directions. For peppers, grill or roast pepper until skin is blistery and black or boil for about 3-5 minutes, until softened.
2. In a bowl, add couscous and all other ingredients parsley and vegan smoked mozzarella cheese. Combine until mixed well.
3. Preheat oven to 350 degrees F. Stuff peppers with couscous filling. You should have enough for two large peppers.
4. Top peppers with vegan smoked mozzarella "cheese" , olive oil and place in oven until cheese and mixture are heated, approximately 5-10 minutes. Top with a sprinkle of parsley for garnish.
Trust me when i tell you this is such a cool alternative to boring bland stuffed peppers. It tasted really good the next day for lunch, also!
