Pancakes and Waffles

What you need: 

1/3 box of silken tofu (I like firm, but any hardness is OK))
2/3 cup soy milk (I like 'Silk')
1 ripe banana
1 tablespoon of soya oil (Or canola, or corn)
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon sea salt
1 tablespoon sugar
1 1/2 cups of flour

What you do: 

Mash up the banana. (This is always fun). Combine in a medium bowl the banana, soymilk, oil, vanilla, and tofu. Mix until smooth with electric mixer (this could be done in a blender as well. Set aside.
In another bowl, sift (or mix with a fork) the dry ingredients.
Pour the flour mixture into the wet mixture, and combine. (I use a rubber spatula. You can lick it afterwards).
On a hot griddle or non-stick frying pan, pour about 1/3 of the mixture. Cook for 3-5 minutes on each side. Yummy!
