One Bowl Brownies

What you need: 

1 cup sugar
1 cup flour
1 tablespoon flax seed mixed with 3 tablespoons hot water
1/4 cup oil
1/3 cup water
1/3 cup cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon salt
3 squares unsweetened baker chocolate, melted
1 teaspoon vanilla

What you do: 

1) Preheat oven to 350 degrees Fahrenheit.
2) Mix flax seed/water mixture, let stand until gooey like an egg. Add all ingredients and stir until incorporated.
3) Mixture will be almost crumbly so you will have to press into a greased 8" x 8" baking dish. Bake for 20-22 minutes. The longer you bake the drier it will be so I always under bake. The brownies will be really gooey when hot so let them cool down and they will firm up nicely.

Source of recipe: I was inspired by my favorite non-vegan brownie recipe on the box of baker's chocolate. I wanted something just as good but vegan. Many adjustments later I found the perfect, rich, fudgey brownie.

SO HOW'D IT GO?

These were very dry. I baked them for 20 minutes. The only change I made was that I used whole wheat pastry flour. That may have something to do with it. The flavor was very good and rich. My daughter liked them. I think next time I will just add more liquid.

3 Tbs of cocoa to 1 Tbs of melted shortening, mixed together, will work in place of barker's chocolate.

Well, it already has 1/3 cup cocoa powder but if you don't want to put in the unsweetened bakers chocolate I think you could probably just up the cocoa powder a bit.  I just love the richness the bakers chocolate gives.
