Oatmeal Raisin Cookies
2 cups sugar
1-1/2 cups water
1 cup canola oil
1 cup raisins
1 teaspoon baking soda
3 cups flour
3 cups rolled oats (not quick-cooking)
1-1/2 cups chopped walnuts
1-1/2 teaspoons cinnamon
1-1/2 teaspoons nutmeg
1-1/2 teaspoons salt
1 teaspoon baking powder
1. Preheat oven to 350 degrees F.
2. In a pot, combine sugar, water, oil, and raisins; bring to a boil and simmer for 5 minutes. Remove from heat and stir in baking soda.
3. In a large bowl, mix remaining ingredients (flour, rolled oats, walnuts, cinnamon, nutmeg, salt and baking powder). Add your boiled mixture to your dry ingredients and mix well.
4. Roll small balls of dough and place evenly spaced on greased baking sheets.
5. Bake for 10 to 12 minutes.
