Oatmeal Chocolate Chip Cookies (with flaxseed)

What you need: 

1 cup dairy-free margarine, preferably Earth Balance
1 cup sugar
1 cup brown sugar
4 tablespoons water
2 tablespoons flaxseed meal
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
3 cups oats, thick cut if you can get them
1 cup or more dairy-free vegan chocolate chips

What you do: 

Preheat oven at 375 degrees F. Mix together flaxseed meal and water, set aside for 3-5 minutes. Cream (beat well) vegan margarine and both types of vegan sugar. Stir flaxseed mixture and add with vanilla to the vegan margarine mix. Beat until blended. Sift together dry ingredients, except oats and chips. Add to vegan margarine mixture. Stir in oats then chips. Scoop or drop onto baking sheet, preferably lined with parchment or silpat. The dough is a little crumbly, so it helps to use a scoop.
Bake 8-12 minutes, depending on size of cookies.

SO HOW'D IT GO?

These were delicious! I couldn't stop munching on the batter. Made lots of small cookies and gave them all to my coworkers. They asked for the recipe! Yum yum, will definitely make again!

I just finished making these.I used all organic ingredients.  I made only a few adjustments- I decreased the sugar- I used coconut palm sugar which has a lower glycemic index,decreased the amount of Earth's Balance( I didn't want greasy cookies) added an extra 1/3 cup of quick oats and added 1/3 cup of blended silken tofu and the cookies were perfect.Smile  They took 19 minutes to bake at 375 on parchment paper and they did not spread very much( I also did not press them down flat on the cookie sheet as I wanted them to be more like mounds). When they were done they slid right off the parchment paper, held together very well, slightly crunchy on the outside and kid of soft/chewy on the inside. As the cooled down, they became a little more firm.

 I will definitely make these again and next time add walnuts and use virgin coconut oil in place of the Earth's Balance. These were amazingSmile

These were INCREDIBLE! I followed the recipe exactly, using a 1/4 cup measure to scoop the dough onto the cookie sheet. I flattened them before baking and then baked for 14-15 min. They were HUGE, and had a perfect combination of crunchy and soft. I brought them to school and they were devoured by friends! I was told that I should open a vegan bakery or become a vegan Martha Stewart! Lol :)

Wow these are sooo good! My changes: I halved the recipe, tried the molasses suggestion (3/4 cup cane sugar + 1 T molasses), and used half white whole wheat flour. I also baked for 12 minutes. Thanks for sharing!

This recipe makes so many cookies! So happy! Took the applesauce suggestion. Couldn't stop eating the cookie dough. My first time making vegan cookies, thank you very much for the recipe!

These are super yummy! I just took my last batch out of the oven. I used raisins instead of chocolate chips.

These things are delicious!!!  I used plain yogurt rather than margarine, and in the place of the 2 cups of sugar, I used one cup plus 1/3 cup of apple juice concentrate.  I had to add about 1/3 cup of almond milk to moisten the dough, and they turned out great!  They really held together well, but were not dry in the least.  My mom requested that I make oatmeal chocolate chip cookies, and I know she will love these!

These are great!  I didn't realize until everything was mixed that I didn't have any chips, but they are still awesome!
