Oatmeal Bake

What you need: 

3 cups quick oats
3/4 cup brown sugar or sucanat
1/2 teaspoon ground cinnamon
1/4 cup melted margarine
egg substitute for 2 eggs, prepared
2 cup soy milk or rice milk
2 teaspoon baking powder
1 teaspoon salt
1/2 cup raisins (optional)

What you do: 

Mix all ingredients together. Pour into a greased 13 x 9 pan. Bake at 350 F for 25 minutes.
I have also used blueberries in this recipe, but if you decide to do that, make sure they are not frozen, it gets too mushy.

SO HOW'D IT GO?

I subbed applesauce for the oil to get a lower fat apple cinnamon flavor, but as the other commentor's said, it really didn't bake. I even added less soymilk. I will try this again and make the batter thinner in the pan.
