Nutty Garbanzo Balls
1 cup firm tofu, crumbled
2 cups cooked garbanzo beans
1/2 cup toasted sesame seeds (or tahini)
2 cloves garlic, peeled
1/2 to 1 teaspoon onion powder
salt, to taste
1 tablespoon chopped parsley
1 cup bread crumbs
1 potato, sliced (raw)
1/2 cup quick oats
1. Preheat oven to 350 degrees F. Blend all the ingredients together, except oats.
2. Dump mixture into a bowl and incorporate the oats. Form balls.
3. If for some reason it's runny, add a little cornstarch. Bake for 30 minutes.
Serve with pasta or whatever you like (even rice!). Top with a favorite sauce.
