Nutritional Yeast Cheese Dip/Sauce

What you need: 

1/4 cup nutritional yeast
1 teaspoon salt
1/4 cup unbleached flour
1/4 teaspoon garlic powder
1/8 teaspoon dried yellow mustard powder
1 cup water
1 1/2 tablespoons vegan margarine (I highly recommend Willow Run for this sauce)

What you do: 

1. Mix dry ingredients, add water, whisk until clumps are gone.
2. Put in pot with margarine, and heat on medium until hick.
This is a very thick sauce as it is best suited for things like alfredo, macaroni and cheese, etc. It shouldn't get as thick as mashed potatoes, though, so be careful. You can add more water if you make it too thick, but it's supposed to be pretty thick.
Mixing salsa with this for nacho cheese with chips is great; adding onion powder and extra margarine works great to use in a scalloped potato recipe; extra garlic, margarine and parsley for alfredo. Try scoops of it on vegan pizza. '

SO HOW'D IT GO?

This is my favorite recipe for "cheese" sauce. Thick, creamy and delicious with salsa for a queso sauce with chips/burritos. I agree, this does taste like the Taco Bell nacho sauce with the fire sauce mixed in... except better!

I accidentally added my photos to the wrong recipe the titles are similar so I got them mixed up. Anyway this turned out very good.  I made my lasgna then pured this over the top after it was done and sprinkled dried basil and oregano on top. This is good, very good.

This recipe turned out well, I havent tasted it yet because my lasagna is in the oven but it seems like it is going to be perfect.  It was a lil thick so I added a few splashes of rice milk, I didnt have any mustard powder so I used tumeric and just added a lil bit of regular mustard.  Will report back when food is done to say what it taste like.

made this again, thought it deserved a better photo.  :)
this time I added spinach along with the broccoli, and just a pinch of sugar to the sauce to see how it'd counter the saltyness...not too bad, I must say.
I must try this with salsa for nachos, and soon!

this recipe is fantastic. it's quick and yummy and can be used as a cheese substitute for pretty much anything. in the past two days alone, i've used it with both pasta and then added salsa for nachos. my near-carnivorous roommate--he NEVER eats what i make--devoured it as part of a late night snack and told me this morning: "that was actually really good." A++++!

VERY yummy! I added Mrs Dash and maybe 1/8 tsp cumin as well as half a jar of medium salsa. I only used 1/2 tsp salt, and used 1/2 tsp garlic. It tastes remarkably similar to Taco Bell nacho sauce with their fire hot sauce mixed in... except way better. :)

Oh, and I omitted the mustard because I didn't have any.

I really want to make this recipe, but I don't have access to vegan margarine of any kind where I live.  How would people suggest I replace the margarine?  Would just oil work?  Doesn't seem like it to me...

what do you normally use for "butter"? Use that.....and yes, oil would work because I have made other sauces like this that call for oil. I would decrease the amount a bit.
Have you looked for earth balance, or  smart balance?

You can try the recipe for not so queso dip instead-delish, & just a bit of oleo, whic you can sub olive oil for.

I never buy vegan marg, I just use canola or vegetable oil in its place...I figure, if it's enough to make a difference in the recipe, that's too much darn margarine!
For this, a scant tablespoon of oil worked out wonderfully.
