Not Your Momma's Banana-Nut Bread

What you need: 

7 to 8 overly ripe bananas
1 cup sugar
2 cups all-purpose flour
1/2 cup chopped walnuts
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla extract
1 capful canola (or other vegetable) oil
cinnamon

What you do: 

Mash the bananas, leaving them somewhat lumpy. Mix in walnuts, canola oil, and vanilla extract.
In a separate bowl, sift the dry ingredients together. Add those dry ingredients to the banana mixture and stir until blended. Be careful not to over blend.
Pour the mixture into a glass baking dish or standard sized loaf pan. If you use a loaf pan, coat it with a thin layer of baking spray first. Sprinkle the top with a bit of cinnamon, fresh or ground.
Bake in a preheated 350 degree oven for one hour or until done. A toothpick inserted in the bread's middle should come back clean.

SO HOW'D IT GO?

I used 7 bananas and the consistency is great! Moist, done all the way through, very very good! I used pumpkin pie seasoning instead of just cinnamon. I also added 1/2 bag of chocolate chips, used all whole wheat flour and added a crumble top that I found from another recipe. Best banana bread I've ever had (Shhh, don't tell my mom!)

This recipe was very easy!  Mine turned out way to moist.  I even left it in 15 minutes longer than I was supposed to.  I think 7-8 bananas were too many.  The flavor of the bread is amazing though!
