No Yeast Bread

What you need: 

4 cups flour
1 tablespoon sugar
1/2 tablespoon baking powder
1/2 tablespoon baking soda
2 teaspoons vinegar
1 1/2 cups water
cornmeal, as needed

What you do: 

1. Preheat oven to 400 degrees F. Mix all ingredients in bowl and knead 5 minutes.
2. Shape into a round loaf, put cornmeal on the bottom and place on a baking sheet.
3. Put in to oven and bake 40 minutes.

SO HOW'D IT GO?

CAN THIS RECIPE WORK IF I USED NOT SODIUM BAKING SODA AND NO SODIUM BAKING POWDER?.

For how simple it was to make, this bread was excellent! While I kneaded, it was so doughy that I was feeling a little afraid for my no yeast dough ball (still, I didn't add additional flour). I modified the recipe by substituting 1 cup of wheat flour and added some salt and fresh rosemary. I misted the crust with water after 15 and 30 minutes of baking and again when I took it out to let it cool; I believe this helped to soften the crust. My bread needed longer than 40 minutes in the oven though (because of the wheat flour substitution, maybe). Will make this again sans wheat flour. In response to previous posts I did not think the bread tasted like a pretzel, it tasted like bread - it was sort of pancake-like though... Made a nice football shaped rosemary loaf.

I made this tonight and was sadly disappointed. The crust was extremely hard, the bread was much to dense. Sometimes quick isn't necessarily good.

How doughy is this supposed to be before putting it in the oven? Mine seemed too wet so I think I messed it up by adding in too much additional flour as I kneaded it. It came out really hard.

How do you get that nice crust? I agree with "greencow" it really was kind of like a pancake (but pretzely).

This was my first quick bread, it was easy and i'll keep it in mind for times when there is no yeast around. I smudged some oil on the pan in lieu of cornmeal. The bread was like a loaf of pancake, not bad. It was good dipped in some herb-infused olive oil, not so good as a sandwich bread. I'll probably try it again with some zucchini in the dough to reduce the density.

I just made this bread and it turned our great! ( I used whole wheat flour) It was my first time making bread ever, and it couldn't have been easier. Definately one to keep for the recipe book! ;)b

I just made this bread... it's really good. It almost tasted similar to a pretzel.... and instead of putting cornmeal on the bottom, I used wheat bran- it worked fine.

It was a little hard, but good nonetheless.. thanks so much!

Hey good idea with the vinegar, baking soda combo.  I used all whole wheat flour for mine, and it turned out very well.  It is a little bit hard on the outside, but that's fine by me.  It tastes good, and it was the easiest loaf of bread I've ever made.  Thanks.
