No-Mayo Potato Salad

What you need: 

4 medium potatoes, scrubbed, pricked and cooked
2 Italian sweet green peppers, coarsely chopped
1 sweet bell pepper, coarsely chopped
1 medium red onion, quartered and sliced about 1/4" thick
1 clove garlic (totally optional)
2 large firm tomatoes, diced
4-5 tablespoons salad quality olive oil
4-5 tablespoons malt vinegar
salt and pepper to taste

What you do: 

This is for all of us who love potato salad but get tired of the mayo taste and texture. I find the malt vinegar gives it an extra kick, but fraidy cats can use wine vinegar.
Toss the vegetables in a large bowl, dress with oil and vinegar and season. Toss like mad to blend. Chill.
Simple and delicious, and no mayo!

SO HOW'D IT GO?

I couldn't get malt vinegar, so I used part rice vinegar and part red wine vinegar.

Pretty simple, kind of sweet. The vinegar and bell pepper make it refreshing and summer-y.
