No Bake Peanut butter Chocolate Oat Cookies

What you need: 

1/2 cup margarine (I use Earth Balance)
2 cups sugar (white or brown)
1/2 cup nondairy milk (I use soy)
4 tablespoons unsweetened cocoa powder
1/2 cup peanut butter
1/2 teaspoon vanilla extract
3 cups quick cooking oats

What you do: 

1. Line cookie sheet with wax or parchment paper. In a large pot, bring margarine, sugar, milk and cocoa to a boil. Stirring constantly, let boil for 1-2 minutes until mixture is completely melted. Do not over boil.
2. Take mixture off heat and stir in peanut butter and vanilla until completely melted. Stir in oats.
3. Drop teaspoonfuls of the mixture onto prepared cookie sheet and allow to cool. When cool, turn cookies over to dry the bottoms.
4. Store in an airtight plastic container in the refrigerator.
Enjoy!

I have trouble baking cookies that taste half as good as this recipe. So whenever I'm bringing a dessert to a party/event I always make these. And on holidays. So friggin delicious! Thanks so much for sharing this amazing recipe!  :)>>>

I think this was the first recipe I made from Vegweb, years ago.
These were my first vegan cookies, and my first real success with sweets.
My friend Cassie LOVES them. I fed them to my ex-roommates, who took the recipe to Thanksgiving.
My batch is cooling in the oven, a gift for a friend. She'll be so happy with me!!! :)

Mine also came out a lil gooey. I put them in the freezer to speed up the “cooling process”.

I used all of the ingredients except Almond milk in place of soy and got approximately 30 cookies. I tallied up the Calories, Fats, Carbohydrates, and protein.

Calories 126.g  Fat 4.17g  Carb 20.2g  Protein 2g

Mine never became "cookie" like.  ??? They stayed wet and gooey...but my kids ate them all anyway. Did I do something wrong?

Mine did the same thing!  Still good but never set...kept them out overnight and still gooey...I remember making them as a kid and a couple times in my 20's and never had a problem.  I'm known for leaving out a step (or sometimes 2 steps) in recipes but followed this one exactly...not sure what happened.

Very nice.  Easy to put together, and very yummy.  I substituted 1/3 c. oil for the margarine as another reviewer suggested, and old fashioned oats for the quick cooking.  These are just like the no-bake (nonvegan, probably) cookies I've had in the past.

The flavor is very good, but I felt like it could use a little something extra.  Maybe some chocolate chips, dried fruit or nuts stirred in at the end would do the trick.  I like the idea of coffee flavor too.

YES, they do come out great. My little girls, being chocoholic,  love them. So far I have left out the peanut butter all together some times.At others I have  used 1/2 cup of shredded coconut or 1/2 cup of chopped walnuts instead. They have always turned out great no matter how they are fixed.

Ok...they're in the fridge now. I'm going to try my hardest to let them stay there overnight. I made these so I can give them away for the holidays so I doubled the recipe. I also:

- Used half sucanat, half brown sugar
- Used unsweetened vanilla almond milk
- Carob powder instead of cocoa
- Going by the other reviews, I doubled the extracts but I made a blend of vanilla, almond, and coconut extracts (the aroma was amazing!)

The recipe was very simple. I got 75 cookies. I made 40 like this and 35 I added coconut flakes (natural, not sweetened). I'll return tomorrow once I've sampled them and taken pictures. If they turn out ok, I'll make another double batch (or two) to give out....or keep  ;)

These came out awesome!! I wonder how they would be if you baked them? Just curious...would that ruin them?

man, i don't know what I'm doing wrong. the first time i made these they were the best cookies ever. they came out perfect! well i have tried to make them 3 times since then and they don't harden, they just stay mushy blobs. I'm not doing anything different. its really getting annoying! i want those yummy cookies that came out the first time :(

that has happened to me a few times before, and i have slightly reduced the amount of soy (or other "milk") and/or margarine used....OR you could always add more oats or pb to get them to firm up more!  good luck!  and regardless, the "mush" is delicious!
