No Bake Peanut butter Chocolate Oat Cookies

What you need: 

1/2 cup margarine (I use Earth Balance)
2 cups sugar (white or brown)
1/2 cup nondairy milk (I use soy)
4 tablespoons unsweetened cocoa powder
1/2 cup peanut butter
1/2 teaspoon vanilla extract
3 cups quick cooking oats

What you do: 

1. Line cookie sheet with wax or parchment paper. In a large pot, bring margarine, sugar, milk and cocoa to a boil. Stirring constantly, let boil for 1-2 minutes until mixture is completely melted. Do not over boil.
2. Take mixture off heat and stir in peanut butter and vanilla until completely melted. Stir in oats.
3. Drop teaspoonfuls of the mixture onto prepared cookie sheet and allow to cool. When cool, turn cookies over to dry the bottoms.
4. Store in an airtight plastic container in the refrigerator.
Enjoy!

SO HOW'D IT GO?

man, i don't know what I'm doing wrong. the first time i made these they were the best cookies ever. they came out perfect! well i have tried to make them 3 times since then and they don't harden, they just stay mushy blobs. I'm not doing anything different. its really getting annoying! i want those yummy cookies that came out the first time :(

So good! I just whipped up a batch and it was so hard not to eat the whole batter:)

I'll be taking the rest to my sister's bday party tomorrow, where I will be the only veg. I bet the other people wouldn't even guess that this is vegan!

These were soooo good. I only had about half the amount of margarine I needed so i used some vegetable shortening to compensate. I halved the recipe and subbed coffee for the soymilk which turned out delishhhh.

I just made them! I completely forgot to put in the margarine... yea im retarded. So im just hoping they turn out fine. Ive been eating them right outta the pot lol they are so good. and maybe without the margarine it will be less fat i dont care if its in cookie form or not!

I'm no expert, but I think I should have used instant oats instead of "quick cooking"... the oats didn't cook at all and came out super crunchy... they still tasted great, and I passed the crunch off as a peanut-y trait to my friends... but it was definitely the uncooked oats (I used creamy peanut butter).

Like I said, though, still tasty.  I'm definitely going to try these again with instant.

These cookies were absolutely amazing. Even my nonvegan family members really enjoyed them! They were real easy to make and satisfied my sweet tooth :)

Best thing ever!  These are great and very quick and easy to make.  Will definitely be making these again.  I cut the sugar to one cup and added some more cocoa powder.  Perfect!

FANTASTIC. my peanut butter is a little but more oily so i have to freeze them to keep them firm but that s no problem! i even had my omni friend who literally only eats chicken, bread, and cheese ask me for the recipe!
