No-bake Chocolate Chip Drop Cookies

What you need: 

3/4 bag semi sweet vegan chocolate chips
1/4 jar all natural peanut butter - no sugar added
2 tablespoons vegan butter
1 teaspoon vanilla extract
1/4 cup Turbinado sugar
rice milk
oats

What you do: 

Combine chocolate chips, peanut butter, butter, vanilla & sugar in a medium saucepan. Heat over medium heat adding rice milk as needed until the chocolate chips are melted and everything is creamy and smooth.
Pour over into a large mixing bowl and stir in oats until mixture is of a medium consistency. Drop spoonfuls of the mixture on a cookie sheet and refrigerate until the cookies are firm.
I also added some granola in with the oats and it was really good.

SO HOW'D IT GO?

Yummy and fast! I remember enjoying similar cookies my mom made!

I used a combo of oats and crushed cornflakes, but I didn't stop when they were coated and sticky and kept adding, so mine were a bit crumbly and didn't stick well when I put them on the baking sheet. The bonus though, was that there was some extra that didn't fit on the sheet and I ate it out of the bowl while waiting for the rest to freeze!

These are supah fast to make - can do during a TV break!

Awesome recipe, especially if you don't like baking (I do but sometimes my craving cannot wait). Indulgent, rich...mmmm chocolate.  I like adding coconut for half the oats.  The great thing about this cookie is that you can really just melt together however much choco chips and peanut butter and add an appropriate amount of the remaining ingredients. 
Try it, I bet it will become you're staple quick and easy veggie chocolate fix!
