Natto Salad

What you need: 

small splash vinegar
1 (1.75-ounce) package natto (fermented soybeans)
2 teaspoons diced celery
1 teaspoon diced onion
1 teaspoon chopped green onions or chives
1 to 2 teaspoons vegan mayonnaise, to taste
1 to 2 teaspoons spicy mustard, to taste
soy sauce, to taste
few dashes hot sauce, to taste (optional)
any other ingredients you like to add to bean salad (optional)

What you do: 

1. Mix a few drops of vinegar into the natto to neutralize the ammonia that is responsible for natto's strong odor.
2. Mix in chopped celery, onion, and green onion. Stir in vegan mayo and spicy mustard. Stir in soy sauce to taste, and some hot sauce, if you like.
3. Eat it like this or load it up with any other ingredients that will help you cover up nattos taste, such as more mayo and mustard, a strong salad dressing, or chopped garlic. You could also dilute the natto salad with some plain beans, such as garbanzos, black beans, lentils, or just plain soybeans. Eat the salad with crackers or vegan bread.
