My Farm Ginger Buckwheat Waffles

What you need: 

2 cups dark buckwheat flour
3/4 cup water
1/4 cup olive oil
1 tablespoon molasses
1 lemon, juiced and zested
2 tablespoons powdered ginger
4 teaspoons baking powder

What you do: 

1. Combine all ingredients and beat together well.
2. Bake on hot greased waffle iron about 5 or 7 minutes.
3. Serve warm with vegan syrup or cold with nut butter and jam.

SO HOW'D IT GO?

My boyfriend's mom made these for Thanksgiving brunch, so I can't attest to 100% of the recipe. However, I didn't really like the texture. It was more like a pancake in the shape of a waffle than an actual waffle texture (crisp and crunchy). Also, for me, there was WAY too much lemon zest. I'm also not a fan of olive oil in baked goods, personally. I also felt like I was tasting a lot of baking powder, instead of a baked good flavor. Perhaps some vanilla or almond extract could help with this?

I wouldn't make these myself, and I definitely won't be asking for them at another holiday.

I only used 2 teaspoons powdered ginger, for me even this was to much. And I used much more water. They were ok but nothing I want to eat more often.Riina
