16 baby red potatoes
4 tablespoons vegan Dijon mustard
2 teaspoons paprika
1 teaspoon cumin
1 teaspoon chili powder
1/8 teaspoon cayenne
1. Preheat oven to 400 degrees F. Prick potatoes with fork. Mix mustard and spices together.
2. Toss potatoes with mustard sauce. Spray a baking pan with cooking spray.
3. Place potatoes on pan in a single layer and bake 45 minutes to 1 hour. Turn 2 to 3 times while cooking.'
